Time to break out the grill or cast iron pan, and get your summer started. Spending time with the family with a backyard BBQ is the ultimate summer activity. In its simplest form, all you need for a burger is a meat patty and a bun. Purists insist that a burger should contain no fillers. No eggs or breadcrumbs. Just well-seasoned beef with the right amount of fat to keep it moist and prevent it from drying out. It’s not too hard to upgrade your bun with some lettuce, tomato, onion, garlic mayo, or even a fried egg. The messier, the better! Sometimes you just need to ditch the cutlery and fancy plates and just dig in and enjoy. Isn’t that what summer is all about? BURGER: • 2 lbs. ground beef • 2 tsp. Kosher salt • 1/2 tsp. black pepper TOPPINGS: • Lettuce • Tomato slices • Sauteed onions • Fried eggs HERBED DRESSING: • 1 cup mayonnaise • 1 tsp salt • 1 tbsp sugar (or 1 packet artificial sweetener like stevia) • 1/2 cup fresh parsley (or 4 cubes frozen) • 1 tbsp mustard • 3 tbsp lemon juice • 2 cloves garlic, minced ZUCCHINI FRIES: • 3 zucchinis • 2 cups corn flake crumbs • 2 tsp garlic salt • 1 cup canola oil INGREDIENTS: Recipe and photo by Adina Yaakov, Dietetic Intern and Recipe Developer. The mouth-watering colors of red and green appeal to our senses, and with good reason. Watermelon consists of 91% water, which makes it an excellent choice to keep hydrated during the hot days of summer. So, pick up a watermelon from your local grocery or farm, have a slice or two, and use the rest to make these delectable ice pops! • 2 ½ cups cubed watermelon • ½ cup plus 1 tbsp. sugar • ¼ cup lime juice • 2 kiwis, peeled • 1 cup plus ½ cup canned coconut milk • 1 tsp. vanilla extract • ¾ cup mini chocolate chips INGREDIENTS: Makes 20 Pops!
