We’ve got that too... #1 Biscotti This recipe came to us via Yocheved, who got it from Hindy, who got it from another friend. It was impossible for us to find out the original source! However, since this recipe is one of the best ones we’ve ever tasted, we decided to share it. • 3 eggs • 1 cup sugar • ¾ cup oil • 1 teaspoon vanilla sugar • 2 teaspoon baking powder • 3 ½ cups almond flour • ½ cup potato starch • 8 ounces chocolate chips 1. Preheat oven to 350ºF. Line a baking sheet with parchment paper. 2. In the bowl of an electric mixer, beat eggs, sugar, and oil for 6-7 minutes. Gradually add in remaining ingredients. 3. With wet hands, form the batter into a loaf on the prepared baking sheet. Bake for 25-30 minutes. 4. Let cool. Slice into ½ inch slices on the diagonal with a serrated knife. Place slices back on the baking sheet side down and bake for another 8-10 minutes until lightly brown. Let cool to crisp.
