Back before they became picky eaters, each of my kids loved this dish as toddlers. It was probably the first chicken they enjoyed at age one. This will also work well with ground beef. If you think this is too light for a main course, round out your meal with some beef or chicken satay and brown rice (I like to use sushi rice for this type of meal). Or, if you like it as a main, add an Asian-inspired salad. Ingredients such as carrots, cucumbers, mushrooms, avocado, cabbage, edamame, rice, sunflower seeds, and sesame seeds are some choices that will work well in your salad bowl with your Romaine or spinach leaves. Dress with equal parts soy sauce, rice vinegar, and vegetable or sesame oil. Make this a to-go lunch the next day by adding lettuce and chicken into a 10-inch whole wheat wrap (avoid adding the liquid). To keep your wrap tightly sealed and fresh when on the go, roll it up first in parchment or wax paper, then in aluminum foil.
