He currently offers kosher event coordinating services through www.TheAmericanChefKosher.com Ingredients: 1 tbsp Olive oil ¼ cup thinly sliced red onion 1 tbsp chopped garlic 1 tsp Jalapeno pepper (remove the seeds for a less spicy salsa) ¼ cup diced pineapple ¼ cup diced mango ¼ cup diced papaya ¼ cup diced plum tomatoes 2 tbsp fresh cilantro 1 tbsp fresh lime 2 teaspoons cumin 1 tsp ground coriander 1 tsp hot sauce Salt and freshly ground black pepper Directions: 1. Heat oil in a medium heavy bottom saucepan set over medium heat. 2. Sauté Red onion, garlic, and jalapeno until soft (2-3 minutes). 3. Add pineapple, mango, papaya, and tomato and toss, cooking 2-3 minutes to heat through. 4. Add cilantro, cumin, coriander, and hot sauce, and toss quickly before removing from heat. 5. Season with salt and pepper to taste. 6. Serve warm but not too hot. This strong and tangy mix would go fabulously as a dip with tortilla chips or even mixed into pasta. 76 COMMUNITY MAGAZINE
