60 COMMUNITY MAGAZINE Grilled Marinated London Broil Ingredients: 2 to 3 lb. London Broil • ½ cup dry red wine (use the • good stuff) ½ cup soy sauce • 2 Tbs. Cajun seasoning • 2 Tbs. minced garlic • 2 Tbs. brown sugar • 1 Tbs. tomato paste • 1 Tsp. black pepper • Directions: Combinethemarinade ingredients 1. and pour them over the London Broil in a large Ziploc bag. Let themeat marinate in the refrig- 2. erator for at least 4 hours. Preheat the grill to a “screaming 3. hot” temperature. Remove the steak from the mari- 4. nade and place it on the hot grill for about 6 to 7 minutes per side (for “medium”). Meanwhile, pour the remaining 5. marinade into a small saucepan and bring it to a boil. Lower the heat and simmer for another 10 minutes. Transfer the steak to a cutting 6. board and let it rest for 5 minutes before carving it across the grain into thin slices. Serve with the marinade sauce 7. on the side.
